Welcome to Local Eats!!!

Hey there everybody!!! The purpose of this blog is to make everyone aware that they're missing out on some of the best produce in the U.S. How many of you knew that there are farms, referred to as CSA's, that anyone can be a partner in and receive produce all throughout the growing season?
For more info go to www.localharvest.com

My name is Kyle. My wife Bethany and I live in Alaska with our little girl. This year we decided to take part in a CSA. We payed $500 to get a weekly delivery of everything the farm produced over the entire growing season. (just produce in our case, but there are CSA that can do meat/egg shares as well)

Obviously the growing season is here isn't very long since we have such short summers, but when summer hits full throttle we have about 22 hour of sunlight a day which let the plants grow pretty quickly!!

I'd also like to say that I am by no means all into the organic/earth friendly/sandals and singing songs around a fire kinda guy. I just flat out like GOOD FOOD, and I've never seen veggies any fresher than these first few weeks.

We'll keep you in the loop over the growing season and let you know how it all works out. I'll be sure to put some good recipes in a blog as we try them out.

My brother Ryan and his wife are also participating in a CSA down in Chicago. He's also keeping a blog of his experience at:

This week we got some baby turnips... great to eat raw along with some mixed kale, mustard greens, mesclun salad mix, purple lettuce, and some more baby bok choi...

I tell you what, I'm about as far from a hippie as they come, but I love having them grow my vegetables!!!!!!

WEEK 4

So this week was another good week for greens, with our first veggies showing up!!

This week we got a bunch of mixed greens, baby spinach, baby bok choi, mustard greens, and some great little radishes that packed quite a punch. I really didn't do anything crazy with them this week, I ate most of them plain, but I have a great recipe for spinach I'll post.

WEEK 3

We can finally tell things at the farm are picking up a little bit and next week we should see some veggies. This weeks take included.

Baby Bok Choi
Mustard Greens
Arugula
Spicy mixed greens

With the Baby Bok Choi we made a really quick dish and served it along side steak and sweet potatoes. (see recipes)

WEEK 2

Week 2 (Monday, June 9th) we had our second pickup. We saw a little variety but still mostly greens. We had some deer tongue lettuce, Kale, and some more spicy greens.

Deer tongue lettuce is fantastic, a mild green that stands up to dressing well considering how most greens wilt pretty quick after you dress them.

With the Kale we made a Zuppa Toscana (see "recipes")

WEEK 1

This year was a slow start since we had 2 feet of snow dropped on us at the end of april (the wonders of living in Alaska).. so finally when our first week of pickups started we had a few greens.
We got a really nice romaine, some mixed spicy greens, and some bib lettuce.

For the most part we just used it for salads but as we get into the season I have some other ideas for those spicy greens :)
