Welcome to Local Eats!!!
Hey there everybody!!! The purpose of this blog is to make everyone aware that they're missing out on some of the best produce in the U.S. How many of you knew that there are farms, referred to as CSA's, that anyone can be a partner in and receive produce all throughout the growing season?
For more info go to www.localharvest.com
My name is Kyle. My wife Bethany and I live in Alaska with our little girl. This year we decided to take part in a CSA. We payed $500 to get a weekly delivery of everything the farm produced over the entire growing season. (just produce in our case, but there are CSA that can do meat/egg shares as well)
Obviously the growing season is here isn't very long since we have such short summers, but when summer hits full throttle we have about 22 hour of sunlight a day which let the plants grow pretty quickly!!
I'd also like to say that I am by no means all into the organic/earth friendly/sandals and singing songs around a fire kinda guy. I just flat out like GOOD FOOD, and I've never seen veggies any fresher than these first few weeks.
We'll keep you in the loop over the growing season and let you know how it all works out. I'll be sure to put some good recipes in a blog as we try them out.
My brother Ryan and his wife are also participating in a CSA down in Chicago. He's also keeping a blog of his experience at:

SPINACH RECIPE
Ok, for those of you like me that aren't huge spinach fans (meaning you wouldn't just sit down and eat a bowl for fun), this is a GREAT way to use a LOT of spinach and make it taste great!!!
I've used this recipe a few times since we usually get spinach in huge quantity and it's a great way to eat alot of it without knowing it!!!!
I always use this when we have fish (being in Alaska makes that easy). I like to use it with Halibut, but any other fish would work fine.
This is also probably the easiest recipe you've ever seen...
Get a big pan/skillet and get it hot.. put in a blerp of olive oil (exact measurements here:)
get the oil hot and throw in a minced clove of garlic and immediately after toss in a bag of spinach. (it will look like A LOT of spinach, just wait 5 seconds).
the pan may look like it's overflowing with spinach but it will wilt down VERY quickly... just stir/toss it around for about a minute until it's all softened.... and that's it... salt and pepper if you like..
All I do is put down a nice bed of spinach on a plate and then put my piece of fish on top... serve it with steamed veggies and it makes a great tasty, healthy dinner.
Here's the recipe in "non narrative format" :)
1 big bag of spinach
1-2 TBS olive oil
garlic... however much you like
salt and pepper to taste
get the pan hot.... throw everything in.... stir for a minute or 2 and serve as a bed for a nice piece of fish....
